Ingredients

Easy Beer Cheese Sauce

  • 2 Tbsp Melted Butter
  • 2 Tbsp Flour
  • 1 Tbsp cornstarch
  • 1 cup Grist Crimson Crow American Red Ale
  • 1 cup Shredded Gouda (regular or smoked, not pre-shredded)
  • 1 cup Shredded Cheddar (not pre-shredded)
  • 1 cup Whole Milk

Red Ale Pickled Jalapenos:

  • 5-6 Large Jalapeno peppers
  • 1 cup Grist Crimson Crow American Red Ale
  • 1 cup Apple Cider Vinegar
  • 3 Tbsp sugar
  • 2 Tbsp salt
  • 1 Tbsp Black Peppercorns

Burgers

  • 1 lb 80/20 ground Chuck
  • Salt and Pepper to taste
  • Large fresh tomato sliced
  • Crispy fried onions
  • 4 brioche or other study hamburger buns

Preparation
Prep Time: 45min

Easy Beer Cheese Sauce:

Note: Do not use pre-shredded cheese as it doesn’t allow the cheese to melt thoroughly. Sauce can be made a day ahead. Re-heat over low heat until smooth and pourable.

  1. Add all ingredients to a blender or food processor. Process on high until very well blended, about 3-5 minutes.
  2. Put blended ingredients in saucepan and heat over medium high heat. Whisk continuously until thick, about 5 minutes. Salt and pepper to taste.

Red Ale Pickled Jalapenos:

  1.  Slice, the Jalapenos to desired width, put in storage jar.
  2. Put remaining ingredients into medium saucepan and heat over medium heat. Stir until salt and sugar dissolve.
  3. Pour hot liquid over sliced jalapenos, cover tightly and refrigerate for 24 hours. Will keep for several weeks if stored properly.

Burgers:

  1. 1 lb (80/20) ground Chuck
  2. Salt and Pepper to taste
  3. Large fresh tomato sliced
  4. Crispy fried onions
  5. 4 brioche or other sturdy hamburger buns
