Cambozola and Balsamic Onion

Ingredients

  • 2 thin slices sweet onions
  • 3/4 tsp. Aceto Balsamico (or Balsamic Vinegar)
  • Pinch of sugar, optional
  • 1 1/2 tsp. butter, separated
  • Cambozola* cheese to taste, softened
  • 1 slice tomato
  • Sourdough, ciabatta, French or Italian bread

Preparation

*Cambozola is a tasty cross between brie and bleu cheese.

Saute onions in 1/2 tsp. butter, when starting to brown, add Balsamico (if using commercial balsamic vinegar, add a pinch of sugar.) Cook until soft. While cooking onions, spread Cambozola on one side of two slices of bread. Top one side with sauted onions and slice of tomato, and then second slice of bread. Wipe out pan and add 1/2 tsp. butter, grill to brown, turn and repeat on second side to brown.
