Caramel Apple Pork Chops

Ingredients

  • 4 (3/4 inch) thick pork chops
  • 1 tsp vegetable oil
  • Fine sea salt and white pepper to taste
  • 2 TBS brown sugar
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 2 TBS butter
  • 2 tart apples - peeled, cored and sliced
  • 3 TBS pecans, optional

Preparation

Preheat oven to 175 degrees F. Place an heat-safe plate in the oven to warm. Heat a large skillet over medium-high heat and drizzle with oil. Season chops evenly with salt and pepper, and cook in hot pan for 3-4 minutes per side minutes, or until almost done. Transfer to warm plate, and keep warm in the oven.

In a small bowl, combine brown sugar, salt, pepper, cinnamon, and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover, and cook until apples are just tender. Remove apples with a slotted spoon, and arrange on top of chops. Keep warm in the oven.

Continue cooking mixture uncovered in skillet, until sauce thickens slightly. Spoon sauce over apples and chops. Sprinkle with toasted pecans.
