Preheat oven to 450°. Prepare a baking sheet with parchment paper for easy clean-up.
Cut Cod into serving-size pieces and brush with melted butter, olive oil or a combination of butter and oil – could also be misted with oil.
Combine Tony’s Panko Breading with 1-2 TBS melted butter or olive oil and pack onto cod fillets. Place on prepared pan and roast in the top half of a 450 F until the cod flakes easily with a fork – about 8 to 10 minutes. Use convection fan for more browning, if desired; rotating pan once.
Serve with Lemon Wedges.
* Notes: For an extra kick, add 1 TBS Parmigiano Reggiano to the Parma crumbs, or pinches of Cajun seasoning to the Southwest crumbs.
