Family Style Carne Asada Burritos

Ingredients

  • 1.5-2 lbs Tony’s Carne Asada, Tequila Lime or Nicaraguan Steak Sizzl’rs (or flank steak seasoned with Tony's Chile Arriba!)
  • 1 TBS vegetable oil
  • 1 large onion, sliced 1/4 - 1/3 inch thick
  • 1 bell pepper, or 2 jalapeno or both, sliced (optional)
  • 1-2 cups grated cheddar or pepper jack cheese
  • 1 pack shredded cole slaw veggies, or 2 cups shredded lettuce
  • 1-2 tomatoes, diced
  • 6-10 flour tortillas
  • Garnishes: Tony’s guacamole, pico de gallo and sour cream; hot sauce; lime wedges; cilantro

Preparation

Preheat a medium high grill, grill pan or skillet, mist with oil and add marinated steak. Grill or saute to rare or med-rare (for less attentive indoor cooking, sear one side, turn and finish in 350° oven about 8-10 minutes). Remove, cover and rest for 10 minutes before slicing thin across the grain.

Meanwhile, brush onion and sweet or hot peppers with vegetable oil and some of the meat marinate (or oil and a sprinkle of Chef Mick’s Chile Arriba! Seasoning) and grill or sauté alongside the steaks (or in a second pan) to brown and soften. Warm tortillas.

On a large platter, arrange meat, onions, jalapenos, cheese, lettuce, tomatoes and any other garnishes you prefer – serve family style with tortillas.
