Fresh Orange Halibut

Ingredients

  • 2 lbs. fresh Halibut
  • Juice and zest of 1 orange
  • 1 tsp. lemon juice
  • 1/8 tsp. nutmeg
  • 4 TBS. butter
  • Salt and pepper to taste
  • 1/4 cup minced parsley

Preparation

Wrap fish in a paper towel for a few minutes to remove excess moisture. Place a single layer of fillets in a buttered baking dish. Combine the juices and zest and pour over the fish. Sprinkle with salt, pepper and nutmeg and dot with butter.

Bake at 400-425 degrees for 10 to 12 minutes, or until fish flakes easily. Let stand 5 minutes, then remove to a hot serving dish. Pour pan drippings over the fish if you like (they may be strained if you wish). Sprinkle with parsley & serve.

I made this for family yesterday and everyone enjoyed it. Given that halibut is a mild fish, I would tweak this recipe with more orange zest and nutmeg. It was good as is but my preference is for more seasoning on this mild fish. A seasoned fish rub would be another alternative using white wine instead of orange juice, zest,and nutmeg.

We made this recipe after purchasing the halibut last Saturday. It was extremely fresh tasting and light! Loved the light orange flavor. The recipe was easy. We had a thick piece, so it did take longer that recommended. I dont like fish over cooked, and this turned out perfectly. I had some left over and made a fish burrito with some salsa, fresh radish greens and a little cheese-delish!
