Glazed Pork Tenderloin

Ingredients

  • 1 pork tenderloin – about 1 pound (also great with thick pork chops)
  • Seasoning: Tony's Harissa or Cajun Seasoning (for spicy), Z Blend, Sassy Cilantro, Rotisserie Chicken, Roast Pork & Poultry Seasoning, or sea salt and fresh cracked pepper
  • Vegetable oil, as needed
  • Primo Spicy Preserves, Tony’s Fruit Preserves, Chutney or Savory Jam of your choice

Preparation

Grill Method:
Rub chops lightly with oil and sprinkle to taste with your favorite Tony’s Seasoning Blend. Preheat a medium high grill (350-400°) – adding soaked wood chips will impart a smoky flavor.

Grill over direct heat to brown, about 3 minutes, roll ¼ turn and repeat to brown all sides. Reduce heat (or move to higher cooking level), brush with preserves, chutney or jam of your choice and continue to cook, turn and baste every 3-4 minutes. Remove from grill at 145-150° internal (about 15-20 minute cooking time depending on conditions) and rest for 5 minutes as you prepare for plating. Slice and serve with additional preserves.

Oven Method:
Preheat oven to 400° and a heavy, oven-safe skillet over medium high heat (about 360-380°). Season pork as desired and sear in preheated and oiled pan to brown nicely on 3 of 4 sides. Glaze generously with preserves or jam and transfer to preheated oven.

Roast to 145-150 degrees internal (about 5-10 minutes longer), convection fan on if available. Remove and rest for 5 minutes before slicing thinly and serving with more preserves or jam.
