Ingredients

New Orleans BBQ Spice Rub (Makes 3/4 Cup)

  • 1 TBS Paprika
  • 1 TBS Smoked Paprika
  • 1 TBS Ancho Chile Powder
  • 1 TBS Cayenne Pepper
  • 1 TBS Granulated Garlic
  • 1 TBS Granulated Onion
  • 1 TBS Black Pepper
  • 1 TBS White Pepper
  • 1 TBS Kosher Salt
  • 1 TBS Brown Sugar
  • 1 TBS Dried Thyme
  • 1 TBS Ground Cumin

Main Dish

  • 1 LB Tony's Royal Red Shrimp, shell-on and deveined
  • 1/2 Cup Diced White Onion
  • 1/2 Cup Diced Celery
  • 1/2 Cup Diced Red Bell Pepper
  • 6 oz. Smoked Andouille Sausage, casing removed & diced
  • 6 TBS Unsalted Butter, divided
  • 1/2 TBS Minced Garlic
  • 2 TBS Worcestershire Sauce
  • 1 TBS Lemon Juice
  • 2 TBS Water
  • 3 TBS New Orleans BBQ Spice Rub (recipe above)
  • 1/2 TBS Frantoia Olive Oil
  • 2 Green Onions, thinly sliced on the bias
  • Salt & Pepper, to taste

Preparation
Prep Time: 5min | Cook Time: 10min

For the New Orleans BBQ Spice Rub:

  1. Mix all spice rub ingredients in a bowl or pulse together in a spice grinder to combine.

For the Main Dish:

  1. Place shrimp and olive oil in mixing bowl. Toss to coat.
  2. In a large skillet, melt 1 TBS of butter over medium heat. Set the remaining butter aside.
  3. Lightly brown the diced andouille sausage, about 1-2 minutes.
  4. Add the diced onion, celery, and bell pepper and continue cooking, stirring frequently for another 1-2 minutes.
  5. Add minced garlic, remaining butter, and season with salt & pepper to taste.
  6. Cook for an additional minute, long enough to just sweat the vegetables but not to brown them.
  7. Add the shrimp and continue cooking over medium heat for 3-5 minutes, stirring frequently.
  8. When the shrimp is just about halfway cooked through, add the Worcestershire sauce, lemon juice, and water, and continue cooking until the shrimp are done, another 2-3 minutes.
  9. Top with green onions and serve with Tony’s Dirty Rice (available in the deli!).

I watched Regan & Jessica make this last week on Facebook and I'm excited to give it a try tonight for Mardi Gras. It seems pretty easy. I might try to make my own dirty rice, but I know Tony's has dirty rice in the deli. These recipes and the videos are great - thank you both! I'll try to update my review after making this tonight.
