Beat egg whites, salt, and pepper well in bowl. Dip onion rings into egg mixture. Coat with breadcrumbs and place in single layer on a parchment lined baking sheet. Mist breaded onion rings with vegetable oil.
Roast in the top of a preheated 450-degree convection oven until golden brown, about 10 minutes. Remove and sprinkle with fine sea salt to taste – resting to further crisp.
