Apple Cinnamon Chops

Ingredients

  • 4 thick pork loin chops
  • 2-3 apples, thinly sliced
  • 2-3 TBS. butter
  • 1-2 TBS. brown sugar
  • Pinches of cinnamon
  • 2 cups Ritz Crackers, crumbled and separated

Preparation

Slice apples thinly or grate coarsely. Melt butter and sautŽ apples, adding sugar and cinnamon to taste. Once apples are soft, stir in enough Ritz crumbs to moisten and coarsely bind, and then spoon into a bowl to cool. Reserve remaining crumbs.

Cut a large pocket into pork chops. Stuff chops with apple and crumb medley. Sprinkle with seasoned salt and coat in remaining cracker crumbs. Spray with oil and bake at 325 degrees until chop reaches 150 degrees internal, approximately 35-45 minutes. Do not overcook! Allow to rest 5-10 minutes and serve with rice pilaf and steamed veggies of your choice.
