Choose Tony’s Bratwurst patties, or remove bratwurst from casings and shape into 6 patties about 1/2 inch thick – keep refrigerated until ready to grill. Slice cheese into about 12 even pieces and rest on plastic wrap at room temperature.
Slice onions and combine with Guinness and brown sugar and reduce over medium heat and finally low heat until only about 1/4 cup of glaze remains with the onions.
When the onions are about 3/4 done, grill bratwurst over medium high heat until just done. Smother hot patties with onions and glaze and top with cheese.
These patties can be served on over mashed potatoes, over rice, over sautéed mushrooms or on toasted rolls with mustard (preferably Coleman’s).
