Have your fish monger skin and pin bone fish fillets. Season lightly with salt and pepper, mist with oil and roll in cracker crumbs. Place on a parchment lined cookie sheet sprayed with oil and use a mister to spray a light coating of oil over the fish (you can also dip and drizzle with butter).
Roast in the top of a 475-degree oven for approximately 10 minutes per inch of thickness – finishing under the broiler if more browning is desired. Rest 5 minutes and serve.
* The crackers you choose make all the difference. Crisper cracker such as Ritz or Croissant crackers produce a light and crispy breading, while flavored crackers such as Parmesan or cheddar ‘Goldfish’ add their own magic.
