Chicken Italiano

  • 4 chicken breast halves
  • 8 slices mozzarella
  • 8 large, thin slices of pepperoni (or plenty of little slices)
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped mushrooms
  • Italian bread crumbs, seasoning salt


Have your butcher remove bone, skin and flatten chicken breasts to 1/4 to 1/3 inch thick. Lay 2 slices of mozzarella and two slices of pepperoni onto each breast. Place chopped veggies in the middle and roll up chicken breast, trying to keep ingredients inside the best you can. Sprinkle with seasoned salt and roll in Italian bread crumbs. Bake at 350 degrees for 30 to 40 minutes or until center reaches 165 degrees. Serve with pasta and marinara or Italian stuffed shells in red sauce.
