Citrus Scallops

  • 1 1/2 pounds sea scallops
  • 2 TBS lemon juice
  • 1 TBS chopped fresh parsley
  • 1 tsp grated orange rind
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 garlic cloves, minced
  • 1 TBS olive oil
  • 1 TBS chopped fresh parsley


Combine first 7 ingredients in a large bowl, stirring well to coat. Chill for 20 minutes, or at least 5 minutes.

Heat oil in a large nonstick skillet over medium-high heat. Add scallop mixture; saute 5 minutes or until scallops are just done. Top with one TBS parsley. Serve over soba or your favorite Asian noodle.
