Citrus Tri Tip

  • 1 Tri Tip Steak/Roast
  • Tony's Lemon Pepper Seasoning or Sassy Lemon Seasoning* (recipe follows)
  • Orange Sauce**

*Sassy Lemon Seasoning

  • 4 tsp freshly ground pepper medley (black, green, white and pink peppercorns)
  • 4 tsp dried lemon zest
  • 2 tsp Kosher salt
  • 1 tsp sugar
  • 1/2 tsp granulated garlic
  • 1/2 tsp granulated onion

**Orange Sauce

  • 1/2 cup orange marmalade
  • 1 thumb ginger, grated
  • 2 TBS balsamic vinegar
  • 1/8 to 1/4 cup Thai Chilli Sauce (optional)


Season roast well with lemon seasoning blend and grill over indirect smoky coals to desired temperature (suggested 120-125 degrees internal) remove, cover and rest for 5-10 minutes and then slice thin across the grain.

While tri tip cooks, combine sauce ingredients and warm gently in a pan or microwave.

Spread a generous spoonful of the sauce on serving platter, transfer sliced roast to plate, drizzling with all the meat drippings. Spoon over remaining sauce to taste.
