1 Tony’s Old-World Corned Beef Brisket, Chuck, or Top Round
1 Head of cabbage, cut into wedges
1 Large onion, quartered
4 Large carrots, peeled and cut into chunks
3 Whole cloves garlic, minced
2 Whole bay leaves
4 Cups water or beef broth
12 Oz beer (optional, but adds great flavor)

Cooking Directions
Place the corned beef in a large slow cooker (6-8 qt) with the fat side up.
Add aromatics, scatter the onion, garlic, bay leaves, and peppercorns around the beef.
Add water (or broth) and beer, ensuring the beef is mostly covered.
Cover and cook on LOW for 8-10 hours or until meat is fork-tender.
In the last 2 hours of cooking, add the carrots, onion, and cabbage wedges on top of the beef.
Slice the corned beef against the grain and serve with the cooked vegetables. Enjoy with Lakeshore Irish Mustard and Irish Soda Bread for the perfect meal!
