Crater Lake Blue Cheese Chicken Salad Sandwiches

  • 6 soft Whole Grain Hoagie rolls, split
  • 6-8 ounces of your favorite Rogue Creamery Blue cheese
  • 2 cups chopped cooked chicken
  • 2/3 cup chopped celery
  • 1/3 cup light mayonnaise
  • 1/3 cup thinly sliced green onion
  • 2 teaspoons fresh lemon juice
  • Salt and pepper


Split rolls and divide cheese evenly between them.

Combine cooked chicken, celery, mayo, onion and lemon in a bowl; season to taste with sea salt and black pepper. Spoon chicken mixture into rolls.

Serve immediately, or wrap tightly in foil and chill before packing for work or a picnic
