Daniel Rosacci’s Royal Red Shrimp Scampi

Ingredients

  • 1 1/4 - 1 1/2 LBs Royal Red Shrimp (or any other), peeled
  • 2-3 TBS Salted Butter
  • 2-3 TBS De Cecco L'Olio Olive Oil
  • Salt to taste
  • Pepper to taste
  • 1 Medium Shallot, minced
  • 1/4 - 1/2 Cup Italian Parsley, Chopped
  • 1/2 - 1 TBS Minced Garlic
  • 1/4 - 1/2 Cup White Wine
  • Juice of 1/2 Lemon
  • Freshly Grated Parmesan Cheese
  • Freshly cooked Linguine or Capellini

Preparation
Prep Time: 10min | Cook Time: 10min

  1. Melt Butter & olive oil over medium to medium-high heat.
  2. Add shallots and garlic and sauce 1-2 minutes or until shallots are translucent.
  3. Slowly pour in white wine and simmer about 60-90 seconds.
  4. Add in your peeled shrimp and cook 2-3 minutes or until the shrimp are just firm.
  5. Mix in the lemon juice, salt, pepper, and Italian Parsley.
  6. Stir in 1/4 cup or so of freshly grated Parmesan cheese and serve over freshly cooked pasta of your choice.
  7. Top with more Parmesan and salt & pepper to taste. Buon Appetito!
