Combine olive oil and garlic, rubbing generously over steak. Reserve remaining oil for brushing steak, brushing grilled veggies, or for grill-toasted bruschetta. Sprinkle steak with seasoning rub of your choice and rest for 60-90 minutes at room temperature. Prepare a medium high heat grill.
Grill steak over a medium high to high direct-heat fire. Best performance always comes from a heavy grilling grate that is preheated, cleaned and oiled. Close lid and sear steak for three minutes, turn 45 degrees and sear another three minutes. Turn steak over and reduce heat to medium – cooking to rare / medium rare.
Remove to a plate, cover, and rest for 10 minutes to allow steak to finish cooking before slicing and serving – it will rise approximately 10-15 degrees internally, so plan accordingly. Slice thin and serve with your favorite steak sauce.
