Dutch Venison Sausage

  • 3.5 lbs. venison
  • 1.5 lbs smoked bacon
  • 1/2-cup brown sugar
  • 2 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. coriander
  • 2 tsp. black pepper
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • 1/4 tsp. savory
  • 1/8 tsp. cumin
  • 1/4 - 1/2 cup water or beer
  • Hot sauce, to taste


Grind meats into a bowl, grind twice for a more tender sausage. Blend spices into the water and mix into ground meats by hand. Fry up a small patty and taste adjusting seasonings if needed.

Stuff lightly into casings if desired.
