Fresh Corn Casserole

  • 3 cups Colorado sweet corn, cut from the cob
  • 1 TBS flour
  • 1/2 stick butter or margarine, melted
  • 2 TBS brown sugar
  • 1 tsp garlic salt
  • 1 TBS chopped parsley
  • 1 cup milk
  • 2 eggs, beaten
  • 1 small jar (2 ounces) pimentos, chopped (or red bell peppers)


Preheat oven to 350 degrees. In a bowl, mix the corn kernels with the flour. Add the remaining ingredients and mix well. Pour into a baking dish and bake for 1 hour.
