  • 1 large fresh pineapple, peeled cored and quartered
  • 1 red bell pepper, finely diced
  • 1 green bell pepper, finely diced
  • 1 small red onion, finely diced
  • 4 TBS olive oil
  • 3 TBS fresh cilantro, chopped
  • 1 fresh lime juice
  • 2 TBS fresh parsley, finely chopped
  • 2 TBS fresh chives, finely chopped
  • 1 fresh jalapeño, minced with out seeds
  • 1/2 avocado, not too ripe, diced (drizzle with lime juice to prevent browning)
  • salt and pepper to taste

Prep Time: 10min | Cook Time: 10min

Grill pineapple until almost brown, about 5 minutes per side.

Chop the pineapple finely.

Mix with all remaining ingredients. Season to taste.

Refrigerate until needed.
