Season short ribs with olive oil, salt, and pepper.
Sear all sides of short ribs until browned. Set aside.
In a Dutch oven, add olive oil and vegetables. Sauté until softened, add a little braising sauce, and cook for another minute.
Add short ribs on top of vegetables.
Pour braising sauce and beef stock on top.
Cover and cook for 4 – 6 hours until the meat falls of the bone.
Serve over mashed potatoes and enjoy!

Braising is a great way to make a flavorful and easy meal. This recipe is extremely easy to follow. I browned the meat and the vegetables in a Dutch oven, same pot. Tony's sauce is very nice, very flavorful. I pulled out the meat to let it rest. When serving, I poured some of the sauce over the meat. Excellent. Will make this again and again.
