Latin Pork Back Ribs with Smoky Pineapple-Mango Sauce

Dry Rub:

  • 2 TBS packed brown sugar
  • 2 tsp dried oregano leaves
  • 3/4 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp cayenne (or mild chili pepper)

Smoky Pineapple-Mango Sauce:

  • 1/3 cup pineapple juice
  • 1/4 cup vegetable oil
  • 1/4 cup fresh lime juice
  • 3/4 cup chopped fresh mango
  • 2 TBS chopped fresh cilantro
  • 1 TBS chipotle peppers in adobo sauce
  • 1/2 tsp dried oregano leaves
  • 1/4 tsp salt
  • 1/2 teaspoon minced garlic


In small bowl, stir together rub ingredients; rub onto all surfaces of ribs. Slowly grill ribs over indirect low to medium heat for roughly 1 hour.

In a food processor, puree sauce ingredients until nearly smooth. Reserve half of sauce to serve with finished ribs.

Brush remaining sauce on ribs; grill for an additional 30 minutes until ribs are tender and meat pulls from the bone.

Heat reserved sauce and serve with ribs.
