Beef Con Queso

  • 1 lb. boneless beef sirloin steak, cut into small cubes
  • 1 cup salsa
  • 1 can Rotel tomatoes
  • 1 cup milk
  • 2 lbs. Velveeta, cubed


Stir fry beef cubes over high heat. Do not overcook! In a large saucepan, combine salsa, Rotel and milk. Heat until mixture begins to simmer, seasoning to taste. Add beef to cheese mixture. Serve piping hot in a small crock.
