Whisk together the butter, lime and cilantro – set aside at cool room temperature until ready to use.
Brush steaks with olive oil and season with Tony’s Chile Arriba! rub to taste. Prepare a medium gas or charcoal grill (or a grill pan) and grill to rare / medium rare. Remove to a platter, top each with about 1 tsp butter, tent with foil and rest for 5-10 minutes.
Transfer to plates, drizzle with drippings and top with another tsp of butter. Store any remaining butter in refrigerator – also great with pork and chicken!
