Ingredients

  • 5 LBs Sweet Onions
  • 3 LB Chuck Roast
  • 3 TBS Zoe Olive Oil
  • Salt & Pepper (To Taste)

Preparation
Prep Time: 60min | Cook Time: 240min

  1. Preheat oven to 300 degrees.
  2. Season chuck with salt and pepper.
  3. Peel and dice onions into ½” chunks.
  4. Heat olive oil in Dutch oven until shimmering.
  5. Brown roast in Dutch oven on all sides. Remove and set aside.
  6. Place onions in bottom of pan and place roast on top of onions.
  7. Cover tightly and place in preheated oven. Roast for 3-4 hours or until fall apart tender.
  8. Lightly shred beef and serve over a bed of cooked tube shape pasta with freshly grated Parmesan cheese, black pepper, and crusty bread.

"I hope you enjoy the beef chuck and onions when you make it. The key to that recipe is to use any variety of sweet onions, regular yellow onions just don’t give it the same taste. Also, my family and I really enjoy it served as a sauce over large tube shaped pasta like mostaccioli. Top it with fresh grated Parmesano Reggiano, fresh cracked black pepper and crusty bread for a delicious rustic Italian dinner. It’s a dish my grandmother taught me, as kids we called it “Stove pipes and onions” because of the shape of the pasta. I’d love to hear how much you liked it once you make it." - Chef Greg
