For Topping:
Sear Pancetta in a grill pan or on the stove top until the fat renders and is crispy.
For Sauce:
Mix Aioli and chopped sun dried tomatoes.
Assemble:
Butter and toast brioche buns.
Assemble patty and top with arugula, sauce, and topping.

This has to be the BEST burger I've ever had at home! Using the USDA Prime trimmings to make this burger really makes it juicy and oh so flavorful. Definitely will be buying it again! The only other competition is the Kobe burger. YUM.
