Palisade Peaches

Olathe Sweet Corn

These colorful, oddly shaped tomatoes are packed with real tomato flavor. They’re ideal in salads, sliced on toast, or served simply with olive oil and flaky salt.
Summer Recipes Using Local Favorites

Palisade Peach Salsa
Sweet, spicy, and fresh—this salsa is great with chips or served over grilled chicken, pork, or fish.
Ingredients

4 cups Palisade peaches (about 4 peaches), chopped

2 tbsp cilantro, finely chopped
-
2 jalapeños, finely chopped
-
¼ cup red bell pepper, chopped
-
¼ cup red onion, chopped
-
1 tbsp lime juice
-
2 tsp De Cecco L’Olio olive oil
-
Pinch of kosher salt
-
Pinch of black pepper
-
Pinch of cayenne pepper
Instructions

Wash and chop all produce.

Combine ingredients in a bowl and toss well.

Serve with Tony’s Tortilla Chips or use as a topping for grilled meats.
Note: If your peaches aren’t fully ripe, simmer them with 2 tablespoons of sugar until soft but still chunky.
Crab Croquettes with Creamed Corn
A light but satisfying summer dish featuring Olathe sweet corn and Tony’s prepared crab cakes.
Ingredients
For the corn:

8 large ears Colorado sweet corn
-
1 cup half and half, divided
-
¼ cup melted butter
-
1 cup heavy cream
-
⅛ tsp cayenne
-
Salt and white pepper to taste
For the croquettes:
-
4 Tony’s prepared crab cakes
-
½ cup panko breadcrumbs
-
Butter or olive oil for sautéing
To garnish:
-
Chopped green onion
-
Diced tomato
Instructions
-
Cut the kernels from the corn and use the back of your knife to scrape the cob for the corn “milk.”

Puree 2 cups of the corn with ½ cup of half and half.

In a pan, melt butter and add the pureed corn, remaining kernels, cream, remaining half and half, cayenne, salt, and pepper. Simmer until thickened.

Reshape crab cakes into smaller patties and roll in panko. Sauté in a skillet with butter or oil until golden brown on both sides.

Spoon the creamed corn into shallow bowls and top with a crab croquette. Garnish with green onion and tomato.
Pairs well with a chilled glass of crisp white wine or a light rosé.
