Oysters naturally filter the water around them. One oyster can clean up to 50 gallons per day, helping restore ecosystems like the Chesapeake Bay. In fact, back in the 1600s, oysters were so abundant in the Bay they could filter the entire body of water once a week.

Unfortunately, wild oyster populations declined drastically over time due to over-harvesting and habitat destruction. But thanks to improved aquaculture practices and a growing awareness of environmental stewardship, they’re making a comeback—and that’s something worth celebrating.

A co-op of former wild harvesters and small watermen raises Barcat Oysters using aquaculture methods across the Chesapeake Bay in Maryland and Virginia. These farmers actively uphold high standards in sustainable seafood production and quality. By supporting their efforts, we’re helping protect both the environment and their coastal communities.

Barcats are medium-sized (averaging 2.5–3 inches) and available year-round. They’re known for their mild, meaty texture and a salty start with a crisp, creamy, and slightly sweet finish.
