Barcat Oysters are medium in size, averaging 2 1/2 – 3″, and are native to the Chesapeake Bay. They are aquaculture grown by a co-op of former “wild” harvesters and small-time watermen from all across the Chesapeake Bay who are bound by a commitment to quality, sustainability, and environmental stewardship.
In the 1600’s, oysters in the Chesapeake Bay were so abundant that they were filtering the bay’s waters once a week. As technology improved during the Industrial Age, numbers of wild Chesapeake oysters began to decline due to over-harvesting and reef destruction.
Thankfully, oyster populations in the bay are on the rebound, due to innovative technology, sponsored and implemented by the public, private, and non-profit sectors. Farmers are continually improving their “aquaculture” practices and gradually, the Chesapeake Oyster is making a comeback. We are glad to support this effort!
